Make Pupcakes for National Cupcake Day!
December 15 is National Cupcake Day. Any excuse to eat cupcakes right?!!! Really! So I fully intend to do the patriotic thing and eat a cupcake, maybe even two.
At my house there are 14 eyes staring at me when something tasty to eat is present. That's from 7 dogs all drooling while hoping the humans will share.
To celebrate National Cupcake Day and include our 4-legged canine family, we are sharing a tasty "pupcake" recipe!
Carrot and Banana Dog Pupcakes - Makes 24 cupcakes
Ingredients 2 cups water 1 cup unsweetened applesauce 2 carrots, grated 1 egg 2 tablespoons honey 2 ripe bananas, mashed 4 cups whole wheat flour 1 teaspoon baking powder 1 teaspoon cinnamon 24 cupcake paper liners Icing Ingredients ¾ cup cream cheese 2 tablespoons peanut butter 2 tablespoons honey
Pupcake Directions
- Preheat oven to 350F (180C).
- In a large bowl, mix together water, carrots, apple sauce, egg, and honey. Once mixed together, add the mashed bananas.
- In a separate bowl, mix flour, baking powder, and cinnamon.
- Combine dry and wet mixture and mix thoroughly.
- Spoon into cupcake tins (lined with cupcake papers) about ¾ full. Handy tip: Spray inside the paper liner with a bit on non-stick spray (Pam) or lightly coat with butter. Otherwise the pupcake will stick to the liner.
- Bake for about 30 minutes or until a toothpick inserted in the center of a pupcake comes out clean.
- Cool cupcakes on rack before frosting.
- Frost pupcakes, if desired.
Icing Directions
- Beat cream cheese, peanut butter and honey until smooth.
- When pupcakes are cooled, ice with mixture.
